  1. 2 1/2 lbs 1135g / 40oz Peeled sweet potatoes - cut into large chunk

  2. 1 lb 454g / 16oz Carrot, peeled, cut into chunks

  3. 2 Shallots - peeled, halved

  4. 2 tablespoons 30ml Unsalted butter

  5. 1/3 cup 53g / 1.9oz Packed dark brown sugar

  6. 3 tablespoons 45ml Bourbon or apple juice

  7. 1 teaspoon 5ml Salt

  8. 1/4 teaspoon 1 1/3ml Ground cinnamon

  9. 1/8 teaspoon 0.6ml Allspice

  1. Preheat oven to 425F. In large foil roasting bag, place sweet potatoes, carrots and shallots in even layer; seal bag. Place on baking sheet. Bake 1 hour, until tender when pierced with metal skewer.

  2. Meanwhile, in small saucepan, combine remaining ingredients. Bring to a simmer; cook 3 minutes.

  3. In food processor, combine potato mixture and sugar mixture; process, in 2 batches if necessary, until smooth. Scrape into serving dish. Serve immediately.
