  7. 3 very large tomatoes

  8. 1/3 cup olive oil

  9. 1/4 cup red wine vinegar

  10. 1/4 cup onion -- finely chopped

  11. 2 tablespoons capers -- drained

  12. 2 tablespoons parsley -- fresh, minced

  13. 2 cloves garlic -- minced

  14. 1 tablespoon salt

  15. 1 tablespoon dried basil

  16. 1/4 tablespoon ground pepper

  17. 1/2 thick slices, peeling is opitional. Place tomatoes in a shallow dish, and after combining all the other ingredients, stir it all together and let marinade for 3 hours before serving. Mixing the marinade the night before adds to the flavor. - - - - - - - - - - - - - - - - - -
