  1. Horeshe Fesenjan (Chicken With Pomegranate Sauce)

  2. 3 pounds frying chicken, cut up

  3. 5 tablespoons shortening

  4. 1/2 teaspoon poultry seasoning

  5. 1/2 teaspoon pepper

  6. 1 large onion, finely chopped

  7. 3 tablespoons margarine

  8. 2 tablespoons tomato sauce

  9. 2 cups walnuts, finely chopped

  10. 3 1/2 cups water

  11. 1 teaspoon salt

  12. 1/2 teaspoon cinnamon

  13. 2 tablespoons lemon juice

  14. 1 cup pomegranate juice, fresh

  15. 1 tablespoon sugar

  16. Wash and prepare chicken for frying. Saute the chicken with seasoning

  17. in shortening until light brown on all sides. As an alternate method

  18. 350!F oven for 45 minutes. Put aside.

  19. Saute the onions in 3 tablespoons margarine until golden brown.

  20. Add tomato sauce and saute for a few minutes. Add walnuts to the

  21. sauteed onions and saute over a medium fire for about 5 minutes.

  22. Stir constantly and be careful not to burn the walnuts. Add water,

  23. seasoning, lemon juice, and pomegranate syrup. Cover and let cook

  24. on a low fire for about 35 minutes. Taste the sauce and if you find

  25. it a little sour add sugar. Arrange the sauteed chicken in this

  26. sauce. Cover and let simmer for 20-25 minutes.

  27. Serve with steamed white rice.
