  2. 1 1/2 cups flour

  3. 1 cup Swiss cheese, grated

  4. 1 1/2 cups milk

  5. 2 tablespoons butter

  6. 3/4 teaspoon salt

  7. 3 eggs

  1. Melt butter.

  2. Add flour and salt and stir in gradually the milk.

  3. Put on slow fire and boil.

  4. Add the cheese, stirring until it melts.

  5. Remove from fire.

  6. Separate eggs.

  7. Add the yolks to the mixture.

  8. Fold in the beaten whites.

  9. Place in buttered pudding dish or bowl, and set in hot water.

  10. Bake about 20 minutes.
