  1. 1 lb 454g / 16oz Shrimp - cleaned-deveined

  2. 1 Tomatoes

  3. 4 Garlic - minced

  4. 1/2 cup 99g / 3 1/2oz Butter or oleo

  5. 1/2 cup 73g / 2.6oz Finely chopped parsley

  6. 1 tablespoon 15ml All-purpose flour Salt and pepper to taste

  1. Recipe Instructions Blend tomatoes including liquid until fine. In skillet, make roux of flour and butter. Add garlic and continue browning until tender. Add tomatoes, shrimp, salt and pepper. Simmer for 15 to 20 minutes Add chopped parsley before removing from heat. Serve over hot fluffy rice.
