  1. Coconut Oatmeal Cake

  3. 1 c rolled oats

  4. 1 1/4 c water, boiling

  5. 1 1/2 c flour

  6. 1 ts baking soda

  7. 1 ts cinnamon

  8. 1/4 ts nutmeg

  9. 1/2 ts salt

  10. 4 oz butter

  11. 1/2 c sugar

  12. 1 c brown sugar

  13. 2 eggs

  14. 1 ts vanilla

  15. 5 oz butter

  16. 2/3 c brown sugar

  17. 1/4 c cream

  18. 2/3 c pecans

  19. 1 c coconut, shredded

  20. 350F. Prepare one

  21. 9" cake pan as usual.

  22. Place oats in a bowl. Add boiling water and let stand 20 minutes.

  23. Cream butter, sugar, then eggs and vanilla. Add rolled oats. Add

  24. dry ingredients.

  25. Bake for 40 minutes. Top with coconut topping and broil until

  26. golden brown.

  27. For topping: Cream butter then add sugar. Stir in cream, nuts

  28. and coconut.
