  1. FRESH GEORGIA PEACH COBBLER

  2. 1 cup flour

  3. 2 Tbs. sugar

  4. 1 1/2 tsps baking powder

  5. 1/4 tsp salt

  6. 4 Tbs butter

  7. 1 egg, beaten

  8. 1/4 cup milk

  9. 1/2 cup brown sugar, packed

  10. 4 tsps cornstarch

  11. 1/2 tsp cinnamon

  12. 1 Tbs lemon juice

  13. 2 Tbs butter

  14. 1 cup water

  15. 4 cups sliced peeled fresh peaches

  16. In a mixing bowl, combine the flour, sugar, baking powder and salt.

  17. Cut in the 4 Tbs butter with a pastry blender till mixture is

  18. crumbly. Stir the milk into beaten egg and add to flour mixture

  19. till just moistened, 8-10 strokes. Do not overmix batter. Set

  20. aside. In a small saucepan combine brown sugar, cornstarch, cinnamon,

  21. lemon juice, 2 Tbs butter and a cup of water. Cook over medium

  22. heat, stirring constantly till mixture thickens. Then stir in

  23. peaches. Continue cooking approximately 5 minutes. Pour saucepan

  24. mixture into an 8-inch round baking or casserole dish. Spoon the

  25. 6-7 large mounds or dollops. Bake in

  26. oven 25-30 minues. Serve hot with thick cream or ice cream.
