  1. Bok Choy-Shiitake Stir-Fry

  2. 1/2 pound shiitake mushrooms, washed and sliced

  3. 2 tablespoons vegetable oil

  4. 3 garlic cloves, minced

  5. 1 tablespoon grated fresh ginger

  6. 1 head bok choy, chopped, cut into 1-inch pieces

  7. 1/4 cup chopped red bell peppers

  8. 1 bunch green onions, chopped (both green and white parts)

  9. 1 tablespoon dark sesame oil

  10. 2 tablespoons sweet sherry

  11. 2 tablespoons soy sauce

  12. salt to taste

  13. 8 to 12 ounces oriental noodles, cooked

  14. 2 tablespoons sesame seeds, for garnish

  15. 3 to

  16. minutes. Add the garlic, ginger, bok choy, peppers, green onions,

  17. sesame oil, sherry, soy sauce, and salt. Stir-fry until the bok

  18. 5 to 8 minutes. Add the noodles

  19. and mix. Serve on a platter and sprinkle the top with the sesame

  20. seeds. 4 servings
