  2. Title: WHEAT BERRY SALAD WITH WALNUTS & CASHEWS

  5. 1 c Wheat berries

  6. 10 c Water

  7. 1 1/2 tb Oil

  8. 2 tb Orange juice

  9. 1 tb Red wine vinegar

  10. 1 ts Coriander, ground

  11. 1/4 ts Caraway seeds, ground

  12. 2 Apples, Gravenstein or -Granny Smith, halved/cored/

  13. -cut into small dice

  14. 2 tb Mint, fresh; fine chopped

  15. ;salt & pepper to taste

  16. 1/2 c Cashews; toasted/chopped

  17. 1. Place wheat berries and water in a large saucepan.

  18. Bring to a boil over high heat, stirring frequently.

  19. Reduce heat to medium and simmer until very tender,

  20. 1 hour and 10 minutes. Drain and transfer to a

  21. large bowl. 2. Add oil, orange juice, vinegar, coriander, caraway

  22. seeds, apples, mint, salt and pepper. Toss well.

  23. 3. Just before serving, add cashews; mix well.

  24. NOTE: you may substitute cooked brown rice or coarse

  25. cracked wheat for the wheat berries. But wheat berries

  26. add a pleasingly chewy texture.
