  1. 8 ounces cheese tortellini

  2. 1 tablespoon olive oil

  3. 4 1/2 ounces shiitake mushrooms, sliced

  4. 1 tablespoon chopped parsley

  5. 1/2 cup dry white wine

  6. 1/2 cup whipping cream

  1. Cook tortellini according to package directions. Set aside; keep warm.

  2. In a medium skillet over medium heat, add oil. Add mushrooms, fresh herbs and white wine, cook for 3 minutes to reduce wine slightly. Add cream and reduce until slightly thickened, about 5 minutes. Add tortellini and heat through to serve.
