  2. TOMATO-LEEK SOUP

  6. 2 lb Ripe red tomatoes

  7. 1/3 c Fresh parsley

  8. 1 Large leek

  9. 2 Garlic cloves, minced

  10. 1 tb Olive oil

  11. 6 oz Can tomato paste

  12. 2 tb Dry red wine

  13. 1 t Dill

  14. 1 1/2 ts Hungarian paprika

  15. 1/2 ts Marjoram

  16. 1/4 ts Thyme

  17. Salt & pepper to taste

  18. Cut all but 1/2 LB of tomatoes into quarters. With

  19. parsley, process until well pureed. Dice the rest of

  20. the tomatoes & set aside. Slice the white part of the

  21. leek into 1/4 slices. Chop the tender green leaves.

  22. Discard all but a 2 or 3 of the tougher part of the

  23. leaves. Wash carefully. Put the leeks in a large pot

  24. along with the reserved green leaves, garlic & olive

  25. oil. Cover with 3 cups stock. Bring to a boil, lower

  26. heat & simmer for 5 minutes. Add the pureed & diced

  27. tomatoes. Add the rest of the ingredients. Simmer on

  28. 20 to 25 minutes. Chill & serve. - - - - - - - - - - - - - - - - - -
