  2. 2 medium yellow onions, sliced paper thin (about 4 cups)

  1. Melt butter in a 12-inch frying pan over medium heat. When butter is foaming, add onions. (Do not overcrowd—cook onions in batches if necessary.) Start cooking onions, stirring occasionally, until they translucent (about 5-8min) then add sugar and garlic. Continue cooking are deep golden brown and caramelized, about 12 more minutes. Season well with salt and freshly ground black pepper, remove from the pan, and let cool.
