  2. BLACK BEAN SALAD WITH CHILIES

  7. 2 cn Beans, black (15 oz ea)

  8. -drained and rinsed

  9. 6 Scallions -- green part only;

  10. -thinly sliced

  11. 1 c Tomatoes, cherry -- stemmed

  12. -and quartered 1 sm Bell pepper, yellow or red

  13. -seeded and finely diced

  14. 2 Peppers, jalapeno -- seeded

  15. -and finely chopped 1 Pepper, serrano -- seeded

  16. -and finely chopped 1/4 c Cilantro, fresh -- finely

  17. -chopped

  18. 1/4 c Vinegar, sherry

  19. 2 tb Canola oil

  20. 2 tb Vegetable stock

  21. 1 t Mustard, Dijon

  22. 2 ts Cumin, ground

  23. 1/2 ts Oregano

  24. Salt and pepper to taste

  25. In a large bowl, combine beans, scallions, cherry

  26. tomatoes, yellow or red peppers, jalapeno and serrano

  27. chilies and cilantro.

  28. In a small bowl, whisk together sherry vinegar, oil,

  29. vegetable stock, mustard, cumin and oregano. Pour over

  30. the bean mixture and toss until all ingredients are

  31. coated. Season with salt and pepper. Serves 4 as a

  32. main dish; 6 as a side dish.
