  2. 8 small veal leg steaks

  3. olive oil cooking spray

  4. 50g baby spinach

  5. 3 large Roma tomatoes, sliced

  6. 250g mozzarella cheese, thinly sliced

  7. crusty Italian-style bread, to serve

  1. Heat a non-stick frying pan over high heat. Spray both sides of veal with oil. Season with salt and pepper. Cook, in batches, for 1 minute each side. Transfer to a plate.

  2. Reduce heat to medium-low. Return all veal to frying pan. Top with baby spinach, tomatoes and mozzarella. Season with salt and pepper. Cover. Cook for 5 minutes or until mozzarella has melted.

  3. Serve immediately with bread.
