  1. 1 lb frozen cheese-filled tortellini

  2. 1/2 tbsp butter

  3. 1 tbsp olive oil

  4. 1 lb boneless skinless chicken breast halves

  5. 1 roasted red bell pepper -- cut into thin strips

  6. salt and coarsely ground black pepper -- to taste

  7. 4 thin slices smoked chicken or turkey -- cut in thin strips

  8. 1/2 tsp dried sage

  9. 1 1/2 tsp grated lemon rind

  10. 2 tbsp lemon juice

  11. 2 tbsp chopped parsley

  12. Cook tortellini in boiling water according to instructions on package.

  13. Meanwhile melt butter and olive oil in large frying pan over medium high heat. Add chicken breast, salt and pepper, and stir fry for about 3 minutes. Add red pepper strips, turn heat down to medium, and cook until

  14. chicken and pepper is done, stirring periodically.

  16. The original recipe said to roast and peel the red pepper, which I think is too much work. You can buy canned roasted peppers which work wonderfully. If you use them, add them later, with the smoked turkey, since they're already cooked. I like them, but I also like plain red bel l pepper.
