  1. 4 slices bacon, cut crosswise into 1/2-in.-thick pieces

  2. 2 medium yellow onions, thinly sliced Pepper

  3. 1 sheet frozen puff pastry (from a 17 1/4-oz pkg), thawed

  4. 2 oz blue cheese, crumbled (1/2 cup)

  1. Heat oven to 400ºF. Line a baking sheet with parchment paper.

  2. Cook the bacon in a large skillet over medium-high heat, stirring often, until crisp, 6 to 8 minutes; transfer to a paper towel–lined plate. Spoon off and discard all but 2 Tbsp of the bacon drippings from the skillet.

  3. Add the onions to the skillet and cook, stirring often, until very tender and caramelized, 12 to 15 minutes (add a splash of water to the skillet if necessary to help release the drippings). Stir in the bacon and 1⁄4 tsp pepper.

  4. Lay the pastry flat on the prepared baking sheet. Spread the onion mixture over the pastry, leaving a 1⁄2-in. border; crumble the cheese over the top.

  5. Bake until the pastry is golden and crisp along the edges, 25 to 28 minutes. Transfer to a cutting board and slice into squares. Serve warm or at room temperature. How to bring it: Holding the parchment paper, slide the uncut tart (plus parchment) onto a piece of cardboard cut roughly the same size as the tart. Let it cool slightly and wrap it in foil; serve at room temperature or reheat at 350ºF for 10 to 15 minutes.
