  19. *DIRECTIONS*

  20. To cook terrapins: Boil a few and pick them, cutting

  21. out the gall bladder, which is attached to the liver.

  22. Be sure not to break the gall sac. Reserve the eggs,

  23. and put all to stew with 1/2 pint of claret, and rather more Madeira, until done.

  24. Force egg yolks through a sieve, then cream then with

  25. butter. Scald cream over hot water, add seasonings,

  26. and beat in egg yolk and butter mixture. Add terrapin

  27. and sherry, and heat thoroughly.
