  1. 1 lb carrot

  2. 1 ounce butter

  3. 1 pinch salt

  4. 1 cup ginger ale

  5. 1/2 teaspoon chili powder

  6. 1 tablespoon fresh parsley , chopped

  1. Wash & peel carrots, if necessary.

  2. Cut 1/4 inch slices on the bias (consistency important).

  3. In a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale.

  4. Cover and bring to a simmer.

  5. Once simmering, remove the lid, stir, and reduce the heat to low.

  6. Cover again and cook for 5 minutes.

  7. Remove the lid, add the chili powder and increase the heat to high. Cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes.

  8. Pour into a serving dish and sprinkle with the parsley.

  9. Serve immediately.
