  2. BROWN BASMATI LEMON RICE

  6. 1 c Brown Basmati Rice

  7. 2 c Water -- or Vegetable Stock

  8. Grated Zest Of 1 Lemon

  9. 1/4 ts Ground Nutmeg

  10. 1/4 ts Ground Cloves

  11. 1/2 ts Ground Cinnamon

  12. 1/2 ts Ground Cumin

  13. 1/2 ts Ground Coriander

  14. pn Saffron --

  15. 1 tb Chopped Fresh Parsley -- for Garnish

  16. Rinse the rice and soak it for 20 minutes in cold

  17. water.

  18. Add all the ingredients except for the parsley to a

  19. 2-quart pot. Bring to a boil, lower the heat, stir,

  20. and simmer, covered for 20 minutes or until the water

  21. is absorbed and the rice is cooked. Garnish with the

  22. chopped parsley.

  23. Note: this can also be made with white Basmati rice

  24. 1/2 cup of the rice add

  25. 1/4 cup cooked

  26. lentils,1/2 teaspoon chopped fresh parsley and lemon

  27. juice to taste.
