  1. 2 lbs. carrots, cooked and mashed

  2. 1 cup milk

  3. 3/4 cup grated cheddar cheese

  4. 1/2 cup butter

  5. 1/2 cup chopped onions

  6. 1 tsp. salt

  7. 1 tsp. pepper

  8. 1 cup cracker crumbs

  9. 3 eggs, beaten until fluffy

  1. Combine all ingredients, except cracker crumbs and eggs, in a mixing bowl. Fold in cracker crumbs and then gently blend in eggs. Pour into a buttered soufflé dish, and bake for 40 to 45 minutes in a 350 degree oven. Makes 6 servings.
