  5. 1 lb Navy beans, dried

  6. 1/4 c Parsley (fresh),

  7. 1 Ham bone

  8. -with plenty of 1 c Potatoes, mashed

  9. 1 t Salt

  10. 12 c Water -to taste)

  11. 3 md Onions, chopped fine

  12. 1/4 t Pepper

  13. 3 Garlic cloves, minced

  14. 1/4 c Chives (fresh),

  15. 3 Celery stalks, -chopped

  16. -chopped fine Wash the beans and remove those that float in the wash water. Soak

  17. beans overnight in enough water to cover them by several inches.

  18. Drain. In a large kettle, place 3 quarts of cold water. Add the drained

  19. beans and the ham bone and bring to a boil. Reduce heat and simmer,

  20. partially covered, for 2 hours. If scum forms on the surface, skim it

  21. off.

  22. Chop the onions, garlic, celery and parsley. Add to the pot. Add the

  23. mashed potato to the pot. Simmer 1 more hour. Check the beans. If

  24. they are not yet tender, then simmer some more.

  25. Add salt and pepper. Remove the ham bone and pull the meat from it.

  26. Cut the meat into small chunks and toss them back into the soup.

  27. Serve piping hot into preheated bowls and sprinkle chopped fresh

  28. chives atop each.

  29. NOTES:

  30. Bean soup as served in the U.S. Senate dining room -- I lived in

  31. suburban Washington, DC, for most of my formative years. One of the

  32. things that formed in the aforementioned years was a strong

  33. impression that the government was full of beans. One day on a school

  34. visit to my senator I learned just how it was that the government got

  35. to be so full of beans, and I came away with the recipe. This is one

  36. of the best soups I have ever tasted. Serve it with a big loaf of

  37. fresh hot homemade whole-wheat bread, from which people just tear the

  38. bread with their fingers.

  39. The House of Representatives serves a version without the onions

  40. and garlic and mashed potatoes.

  41. Great Northern beans are an adequate substitute for Navy beans.

  42. If you forgot to soak them overnight and still want to make the soup,

  43. you can simmer them for an hour and then discard that water. The

  44. beans end up with slightly more flavor if you cold-soak them.

  45. You can almost certainly get away with using instant mashed potato

  46. flakes to acquire the 1 cup of mashed potatoes that this recipe calls

  47. for.
