  1. 2 oz. Demerara Rum

  2. 1 oz. Demerara Sugar Syrup (1:1 ratio sugar:water by volume)

  3. 1 oz. Freshly Squeezed Lime Juice

  4. 1/2 Spent Lime Shell (leftover from juicing)

  5. 5 dashes Angostura Bitters

  6. Fresh Mint

  1. Gently tamp 12 fresh mint leaves in the bottom of a tall, chilled glass.

  2. Add rum, sugar, lime juice, and lime shell.

  3. Add crushed ice to nearly fill the glass.

  4. Swizzle aggressively for approximately 15 seconds to bring mint and lime shell up from the bottom of the glass and chill the contents.

  5. Dash bitters onto the top of the drink, add a straw and more crushed ice to fill the glass and create a dome on top of the drink.

  6. Garnish with a copious bunch of mint and enjoy
