  1. 1 onion

  2. 1 red pepper

  3. 5 sprigs of thyme

  4. 500g diced lamb (or pork if you prefer)

  5. 1/2 pack of chorizo slices

  6. 1 small jar olives

  7. 250g new potatoes

  8. 1 clove of garlic

  9. 1 tin of chopped tomatoes

  1. Fry lamb in a pan, until cooked. Parboil new potatoes for 20 minutes Add garlic, onion and peppers to the pan and fry until soft. Add the chopped chorizo slices and olives to the pan. Add tin of tomatoes, half a cup of water, the potatoes and 5 sprigs of thyme and leave to simmer. Cover and leave on the heat for 30 minutes.
