  1. Blueberry Surprise

  2. 1 cup 237ml Fresh blueberries

  3. 3 tablespoons 45ml Sugar

  4. 1 teaspoon 5ml Cinnamon

  5. 1/4 teaspoon 1 1/3ml Nutmeg

  6. 1 teaspoon 5ml Lemon juice

  7. Cake

  8. 2 cups 125g / 4.4oz White flour

  9. 2 teaspoons 10ml Baking powder

  10. 1/4 teaspoon 1 1/3ml Salt

  11. 1 cup 198g / 7oz Butter

  12. 1 teaspoon 5ml Vanilla extract

  13. 1 1/3 cups 263g / 9 1/3oz White sugar

  14. 2 Eggs

  15. 1 cup 237ml Sour cream

  16. One lemon - zest of

  17. Glaze

  18. 1 cup 198g / 7oz Confectioners sugar

  19. 1 tablespoon 15ml Lemon juice

  20. Few drops boiling water

  1. Blueberry Surprise Combine all ingredients, except lemon juice. Drizzle on lemon juice, let stand.

  2. Cake Preheat oven to 350F. Butter and flour a 9"x3" Springform pan.

  3. Sift dry ingredients together. Cream butter, sugar and vanilla. Add eggs and beat. Add sour cream. Add sifted dry ingredients. Add lemon zest.

  4. Pour 1/2 batter into pan. Spoon in blueberry mixture, keeping 1/2 inch away from edge of pan. Add rest of batter.

  5. Bake for 1 hour and 20-30 minutes.

  6. Glaze Combine ingredients and pour on warm cake.
