  1. 3lbs chicken parts

  2. 1/4 cup vinegar /lime juice

  3. 3/4 tsp Walkerswood jerk seasoning

  4. 1/2 cup chopped onion

  5. 4 cloves garlic

  6. 2 stalks green onion /chives(chopped)

  7. 1/2 cup green pepper s

  8. 1 tomato (chopped)

  9. 3/4 cup sugar

  10. 3 tbsp oil

  11. 2 cups hot wat

  12. salt to taste

  1. Remove skin and excess fat from most chicken parts. Wash with vinegar or lime juice and drain. Rub in Jerk seasoning and salt(Walkerswood already has salt so be careful!). Add onion, chive, garlic and tomato. Let marinade for an hour. In cast iron skillet heat together oil and sugar till brown and bubbly. Add chicken parts with marinade. Brown chicken on all sides. Add hot water, reduce heat and let simmer for 30 min. Add sweet peppers and continue to simmer another 15 minutes till chicken is tender. Serve over white rice.
