  1. I always have a gallon baggie in the freezer for leftover veggies. And when I make a roast, always try to have a little left over. When winter comes and I want home-made veg soup, just put it all in a pot. Usually add canned tomatoes, and I like a little rice in mine, too. You can add some pasta; have even eaten it with a little cabbage in it. I make corn bread to go with it.
