    8. 1 c Cooked brown rice or mashed

    9. -potatoes

    10. 1 Egg beaten

    11. 2 Eggs hard boiled

    12. 1/2 c Whole-wheat bread crumbs

    13. 1 t Minced parsley

    14. Mix the scrapple, the rice or potatoes, and the hard-boiled eggs, chopped

    15. fine. Season with parsley, salt, and pepper. Shape into croquettes with
