  2. BEEF AND VEGETABLE SOUP

  7. 1 tb Corn oil

  8. 1 lb Stewing beef, cut into 1/2-inch cubes 1 lb Sweet Italian sausage links,

  9. -sliced

  10. 1 cn Tomatoes (28 ounces)

  11. 3 c Water

  12. 1 c Chopped onion

  13. 1 t Salt

  14. 1 tb Worcestershire sauce

  15. 2 lg Potatoes, peeled, cut into 1/2-inch cubes 1 c Sliced celery

  16. In a large, heavy kettle, heat the oil; add the beef

  17. and brown on all sides. Remove the meat with a

  18. slotted spoon and set aside. Add the sausage to the

  19. kettle and brown on all sides. Drain off the drippings

  20. from the kettle. Add the tomatoes, water, onion,

  21. salt, Worcestershire sauce and the reserved browned

  22. beef. Bring to a boil, then reduce the heat; simmer,

  23. covered, until almost tender, about 1 1/2 hours. Add

  24. the cubed potatoes and sliced celery; simmer until the

  25. vegetables and meat are tender, about 20 minutes more.
