  2. Tarragon Beef & Pasta Salad

  7. 1 cup medium shell macaroni -- uncooked

  8. 8 ounces roast beef, cooked -- sliced in strips

  9. 1 cup celery -- sliced

  10. 1 cup cherry tomatoes -- halved

  11. 1/2 cup red onion -- sliced

  12. 1/4 thick

  13. 1 cup plain yogurt

  14. 1/2 cup mayonnaise or salad dressing

  15. 1/4 cup fresh parsley -- chopped

  16. 1/4 cup fresh tarragon -- chopped

  17. 1/4 teaspoon salt

  18. 1/4 teaspoon pepper

  19. Cook macaroni according to package directions. Rinse with cold water,

  20. drain, and refrigerate.

  21. In a large bowl, stir together beef, celery, tomatoes and red onions

  22. (separated into rings). Stir into macaroni. Refrigerate at least one

  23. hour.

  24. In another bowl, stir together yogurt (I use non-fat), mayo or salad

  25. dressing (I use light salad dressing), parsley, chives, tarragon (can

  26. 1/4 teaspoon dried tarragon for fresh

  27. and refrigerate at least 1 hour.

  28. Can be served one of 2 ways:

  29. 1. Place onto plates or into bowls, and pour a spoonful of dressing over

  30. top, without mixing it together.

  31. 2. Pour dressing over the entire salad and serve in a large bowl.
