  1. Green Peppercorn Sauce

  2. (makes about 1 cup of sauce)

  3. 1 can beef broth

  4. 1/4 cup sherry

  5. 4 shallots, finely chopped

  6. black pepper

  7. 1/3 cup heavy cream

  8. 2-3 Tbsp green peppercorns (they come in a jar, marinated in liquid)

  9. Saute the shallots in a small amount of butter over medium heat

  10. until soft. Add broth and sherry, increase heat to high and cook

  11. until reduced to about 1/2 cup. Add remaining ingredients, mashing

  12. some of the peppercorns to emit flavor, and serve over desired

  13. meat.
