  2. WHOLE WHEAT TORTILLAS

  7. 1 1/2 c Unbleached All-Purpose Flour

  8. 1 1/2 c Whole Wheat Flour

  9. 1/4 ts Baking Powder

  10. 1 c Warm Water (110 F)

  11. 2 ts Vegetable Oil

  12. 1/4 ts Salt

  13. These tortillas are lower in saturated fat, with no

  14. cholesterol and higher in

  15. fiber than traditional tortillas prepared with lard

  16. and white flour. Cornstarch, for dusting the tortillas

  17. Stir together the first 6 ingredients. On

  18. a floured board knead until smooth. Divide dough into 12 equal balls. Dust lightly with cornstarch. Roll

  19. into a circle as thin as possible on a lightly-

  20. floured board. Drop onto a very hot ungreased griddle.

  21. Cook until brown spots

  22. appear on one side. Turn and cook on second side.
