  2. Southwestern Grilled Tuna Salad With Basilgarlic Vinaigrett

  8. 4 tuna steaks

  9. --(about 5 ounces each)

  10. 5 teaspoons olive oil

  11. salt and freshly ground pepper -- to taste

  12. 4 new potatoes -- cooked

  13. --slightly cooled

  14. 4 cups mesclun or mixed green lettuce leaves

  15. 1/2 cup basilgarlic vinaigrette -- to taste

  16. 2 small avocados -- peeled

  17. -- cut into quarters 2 medium tomatoes -- cut into quarters

  18. 2 tablespoons nicoise olives -- pitted

  19. 2 tablespoons capers -- drained

  20. Prepare a wood or charcoal fire and let it burn down to embers. Brush the

  21. tuna steaks with 4 teaspoons of the olive oil, season to taste with salt

  22. and pepper, and grill to desired doneness, 2 minutes on each side for medium rare.

  23. 1 teaspoon of oil, and grill about 2 minutes,

  24. turning. When done, slice thick.

  25. Dress the greens with about half of the vinaigrette and toss gently with

  26. the avocados, tomatoes, olives and potatoes.

  27. For each serving, place 1 tuna steak on a large plate and drizzle with a

  28. little vinaigrette. Arrange the salad around the tuna, giving each plate an

  29. equal portion of avocados, tomatoes, potatoes, and olives. Sprinkle with

  30. capers and serve.
