  1. 1/2 cup(s) diced red onion

  2. 1/3 cup(s) light mayonnaise

  3. 1/4 teaspoon(s) kosher salt , or to taste

  4. Freshly ground pepper , to taste

  5. 2 can(s) (6 ounce) chunk light tuna in olive oil , drained

  6. 2 stalk(s) celery , thinly sliced (about 1 cup)

  7. 1/4 cup(s) packed coarsely chopped fresh tarragon leaves

  8. 8 cup(s) torn lettuce , or mixed greens

  9. 1 pound(s) small ripe tomatoes , cut into wedges

  10. 1 lemon , cut into 8 wedges

  1. Place onion in a small bowl and cover with cold water. Refrigerate for 20 minutes. Drain.

  2. Whisk mayonnaise, salt and pepper in a medium bowl. Add tuna, celery, tarragon and the drained onion; stir to combine. Serve on a bed of lettuce (or mixed greens) with tomato and lemon wedges.
