  1. Mushroom Extract

  2. 1/2 cup mushrooms, porcini dried

  3. 2 1/2 cups water

  4. Mushroom Sauce

  5. 1/3 cup onions minced

  6. 1/2 cup water

  7. 1 tablespoon soy sauce, tamari

  8. 1/2 teaspoon salt

  9. 1/2 teaspoon maple syrup

  10. 1 x black pepper

  11. 1 each parsley sprigs

  12. 1 1/2 tablespoons arrowroot flour dissolved in

  13. 2 tb water

  1. EXTRACT:

  2. Place mushrooms in water in a saucepan and bring to a boil.

  3. Reduce heat and simmer for 15 minutes.

  4. Remove mushrooms with a slotted spoon and rinse.

  5. Chop finely and reserve.

  6. Strain extract.

  7. SAUCE:

  8. Combine onions, water, tamari, salt, syrup, pepper and rosemary in a saucepan.

  9. Cover and simmer over medium heat for 5 minutes.

  10. Remove and discard parsley.

  11. Add extract and chopped mushrooms.

  12. Bring to a boil.

  13. Add arrowroot, cook and stir till thickened.

  14. Taste for seasoning.

  15. Use on top of rice, potatoes or pasta.
