  2. 1, 15 ounces, package folded refrigerated pie crust

  3. 4 ounces, shredded pepperâˆ'jack cheese

  4. 4 ounces, shredded Swiss cheese

  5. 1 1/2 cups,

  6. 8 ounces, finely chopped leftover roast beef

  7. 1 cup,

  8. 1/2 pint, heavy cream

  9. 4 eggs

  10. 1/4 teaspoon dry mustard

  11. 1/4 teaspoon black pepper

  1. Preheat oven to 325 degrees F.

  2. Unfold the pie crust and place in a 9 inch deep−dish pie plate, pressing the crust firmly into the plate.

  3. In a medium bowl, combine the pepper−jack cheese, Swiss cheese and roast beef.

  4. Mix well and spoon into the pie crust.

  5. Using the same bowl, whisk together the remaining ingredients.

  6. Pour over the roast beef and cheese mixture.

  7. Bake for 55 to 60 minutes, or until a knife inserted in the center comes out clean.

  8. Cut into 8 pie shaped wedges to serve.
