  1. 675g unpeeled potatoes, cut into 2 1/2cm chunks

  2. 2 tablespoons olive oil

  3. 1 teaspoon sea salt

  4. 1/4 teaspoon black pepper

  5. 40g grated Parmesan cheese

  6. 1/4 teaspoon dried thyme leaves

  1. Preheat an oven to 200 C / Gas 6.

  2. Place the potatoes into a mixing bowl and drizzle with olive oil. Sprinkle with sea salt, black pepper, Parmesan cheese and thyme leaves. Toss to evenly coat and transfer to a 23x33cm or similar sized baking dish.

  3. Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork, about 1 hour. Serve hot or at room temperature.
