  1. 2 pound(s) (about 5) Yukon Gold potatoes , peeled and cut into eighths

  2. 2 teaspoon(s) salt

  3. 1 cup(s) heavy cream

  4. 1/2 cup(s) (1 stick) unsalted butter

  5. 1/2 teaspoon(s) white pepper

  1. Bring the potatoes, 1 teaspoon salt and enough water to cover to a boil in a large saucepan. Cook the potatoes until just tender -- about 20 minutes. Drain the potatoes, return them to the saucepan, and use a potato masher or a fork to mash the potatoes until smooth. Stir in the cream, butter, remaining salt, and pepper, and serve immediately.
