  1. 2 large pieces of flatbread

  2. 2 tablespoons olive oil

  3. 1 cup fennel spread

  4. 2 cups crumbled feta

  1. Preheat oven to 400 degrees If you are making your own flatbread, roll the dough out on two baking sheets and brush each crust with 1 tablespoon of olive oil then bake for 10-15 minutes. Remove the half-baked flatbread from the oven and evenly cover each with fennel spread and feta. Return to the oven and bake for 5-10 minutes more, or until the flatbread is crisp around the edges and the feta is warm and soft.

  2. If you are using store bought flatbread, brush the flatbread with olive oil and place on a cookie sheet. Bake for five minutes, so it gets a little crispy, then remove from the oven and evenly cover with the fennel spread and feta. Bake for 5 minutes more, or until the flatbread is crisp around the edges and the feta is warm and soft.
