  1. CAJUN COLESLAW:

  2. 3-3/4 cups coleslaw mix

  3. 1/2 cup mayonnaise

  4. 3 tablespoons seafood cocktail sauce

  5. 1/2 teaspoon Cajun seasoning

  6. SANDWICHES:

  7. 1/2 cup cornmeal

  8. 1/3 cup all-purpose flour

  9. 1 teaspoon salt

  10. 1 teaspoon Cajun seasoning

  11. 1/4 teaspoon seafood seasoning

  12. 2/3 cup buttermilk

  13. 4 catfish fillets (6 ounces each )

  14. Oil for deep-fat frying

  15. 4 hoagie buns, split

  1. Catfish Po'boys Recipe photo by Taste of Home In a large bowl, toss the coleslaw ingredients; set aside.

  2. In a shallow bowl, combine the cornmeal, flour, salt, Cajun seasoning and seafood seasoning. Place buttermilk in another shallow bowl. Dip fish in buttermilk, then coat with cornmeal mixture.

  3. In an electric skillet, heat 1/4 in. of oil to 375°. Cook fillets for 2-3 minutes on each side or until fish flakes easily with a fork. Drain on paper towels.

  4. Place fish and coleslaw on bun bottoms; replace bun tops. Yield: 4 servings.
