  1. Pineapple Preserves

  2. Pare the pineapple and remove the eyes. Shred with a silver fork

  3. or cut in small pieces, discarding the core. Place pineapple in

  4. a preserving kettle and add 3/4 as much sugar as pineapple. Allow

  5. mixture to stand until a syrup is formed. Cook the mixture slowly

  6. until the pineapple becomes transparent. Transfer to hot BALL

  7. Jars, fill with boiling syrup and seal immediately.
