  2. BAKER'S BEST SPIKED CRANBERRY SAUCE

  8. 6 -1/2 Cup servings 1 1/2 c Sugar

  9. 1 c Red wine -- either a Caberbnet

  10. -Sauvignon or a Zinfandel

  11. 12 oz Cranberries -- fresh and -picked through, rinsed and -drained.

  12. 1 lg Cinnamon stick

  13. Zest of 1 orange -- julliened

  14. In a medium size saucepan, bring the sugar and wine to

  15. a boil and cook for 1 minute. Add the cranberries,

  16. cinnamon stick and the orange zest and bring back to a

  17. boil. Simmer uncovered for 10 minutes or until the

  18. cranberries burst and the sauce thickens slightly.

  19. Remove the pan heat and discard the cinnamon stick.

  20. Allow the berries to cool and put into a decorative

  21. bowel. Refrigerate, covered until ready to use.
