  2. GREEK CHOPPED MEAT STUFFING

  6. 2 Onions -- chopped

  7. 1 Stalk celery -- chopped

  8. 2 tb Butter

  9. 1 lb Ground beef

  10. 1 Liver from turkey

  11. - finely chopped 1 lb Mild breakfast sausage

  12. 1/2 c Dry red wine

  13. 2 tb Tomato paste

  14. 2 tb Chopped fresh parsley

  15. 1 tb Chopped fresh dill

  16. 3/4 lb Roasted chestnuts

  17. - peeled & coarsely chopped

  18. 1/4 lb Pignoli nuts

  19. 1/2 c White raisins

  20. 1/4 c White rice

  21. 1 c -water

  22. 1 lb White bread crumbs

  23. Salt and pepper to taste

  24. Brown onions and celery in butter. Add beef, liver,

  25. and sausage and cook until brown. Add wine and tomato

  26. paste, then herbs, and simmer until meat is tender.

  27. Add nuts, raisins, and rice. Stir in water and cook,

  28. covered, until the rice is done. Mix in bread crumbs

  29. and season to taste. Stuff loosely into the turkey.
