  2. Title: APRICOTS WITH ANISETTE AND FENNEL

  5. 3 lb Fresh apricots

  6. 2 1/2 c Water

  7. 1/2 c Anisette

  8. 2 c Sugar

  9. 4 6 inch sprigs fresh green or Bronze fennel

  10. --ALTERNATIVES--

  11. Cinnamon basil and cinnamon

  12. Liqueur are an alternative.

  13. Prepare jars, lids and boiling water bath.

  14. Wash and dry the apricots, then prick each one several

  15. times. Combine the water, anisette and sugar in a pan

  16. and cook over a med-high heat, stirring frequently,

  17. until the mixture boils and the sugar is dissolved.

  18. Add the apricots and simmer for 3 mins.

  19. Fill each hot dry jar with the fruit and two fennel

  20. springs, leaving 1/2 inch headspace. Pour hot liquid

  21. over the fruit until just covered. Wipe the rims with

  22. a clean towel and attach the lids securely.

  23. Place the jars in boiling water bath, and when the

  24. water returns to boil, process for 25 mins. --
