  1. 4 Ahi tuna steaks - (6 to 8 oz ea)

  2. Salt - to taste

  3. Freshly-ground black pepper - to taste

  4. 1/4 lb 113g / 4oz Butter - (1 stick)

  5. Grated lime zest

  6. 1 tablespoon 15ml Minced fresh cilantro

  7. 1/4 cup 59ml Lime juice

  1. Prepare a medium-hot grill.

  2. Season tuna with salt and pepper. Grill steaks until firm and opaque in center, about 10 minutes for each inch of thickness.

  3. Meanwhile, in a small saucepan over medium heat, melt the butter. Add zest, increase heat to high and bring butter just to boiling point. Remove from heat and stir in the cilantro. Keep warm.

  4. Transfer tuna to a serving platter. Add lime juice to butter mixture, stir and pour sauce over tuna. Serve immediately.

  5. This recipe yields 4 servings.
