  1. 1 lb sirloin steak, cut into thin strips

  2. 1 (12 ounce) bottle Corona beer

  3. 2 tablespoons vegetable oil

  4. 1 medium red onion , thinly sliced

  5. 1 green bell pepper , thinly sliced

  6. 1 roma tomato , chopped

  7. 1 lime, juice of

  8. salt and pepper

  1. Season the meat with salt and pepper. Place in a non-reactive dish and add enough beer to coat the meat (drink the remaining beer). Let marinate at least 2 hours but no more than 2 Drain the meat very well and discard the marinade.

  2. Heat a large skillet or griddle. Add the oil and heat thoroughly. Add the meat and brown on one side.

  3. Turn over and add the onion; cook for a minute. Lower heat to medium and add the bell pepper; cook until the bell pepper is tender.

  4. Add the tomato and the lime juice. Check seasoning and adjust to taste.

  5. Cook until meat is done and vegetables are tender.

  6. Serve with tortillas, beans and salsa or guacamole (or both).
