  1. 2 cups of whole kernel corn drained reserve some of the juice*

  2. 1/2 cup finely diced fully cooked leftover pork chop

  3. 1/4 cup cornmeal

  4. 1/4 cup flour

  5. 1/2 teaspoon ground coriander

  6. 1/2 teaspoon chili powder

  7. 1 egg

  8. 1/4 cup finely diced sweet red onion

  9. 1/2 cup chopped cilantro

  10. 1 teaspoon lime juice

  11. 1 teaspoon lemon juice

  12. 1/2 teaspoon lemon pepper

  13. 2 tablespoons oil

  1. Mix the corn, pork, corn meal, flour, coriander, egg, onion, cilantro, lime juice , lemon juice and lemon pepper in a large bowl. If the mixture is too dry add some of the reserved liquid from the corn*. Heat the oil in a pan to medium high heat. Spoon the corn and pork mixture into the pan to form patties and cook until golden brown on both sides, about 4 minutes per side. Yield: serves 8 Notes: *If you prefer to use fresh corn you will have to use water or whatever liquid you choose if the mixture is too dry.
