  1. 150g/5oz green beans, cut into halves

  2. 1 Tbsp sunflower oil

  3. 2 cloves garlic, finely chopped

  4. 1/2 in piece fresh ginger, chopped

  5. 1 red pepper, diced into bite-size pieces

  6. 300g/11oz firm tofu, diced Into bite-size pieces

  7. 4 spring onions, chopped

  8. 4 bok choy leaves, diced

  9. 1 Tbsp shaoxlng rice wine, or dry sherry

  10. 2 Tbsp black bean sauce

  11. 1 Tbsp Chinese light soy sauce

  12. 1 tsp sugar Serves

  1. Method : Blanch the green beans in a pan of water for 2 minutes, and drain. Heat the oil in a wok or frying pan, and stir-fry the garlic and ginger for 1 minute. Add the pepper, green beans, tofu, spring onions and bok choy leaves and stir-fry for 4 to 5 minutes. Add the rice wine, black bean sauce, soy sauce and sugar, then stir-fry for 2 more minutes. Serve with a bowl of short-grain rice.
