  1. 2 Chicken breast - boned and skinned

  2. 1/2 cup 118ml Dry white wine

  3. 1 Juice of

  4. 1 lemon

  5. Oil

  6. 1/2 lb 227g / 8oz Mushrooms - sliced

  7. Flour - salt, pepper

  1. Pound chicken breasts to about 1/4" thickness. Dredge in flour, salt and pepper. Fry quickly in oil.

  2. Sautee sliced mushrooms in same pan. Add juice of one lemon and the white wine.

  3. Boil down to about 1/2, then add back the chicken and heat until chicken is warm.
