  4. 1/2 stick butter

  5. 1 c diced bacon

  6. 1 c sliced yellow onions

  7. 1 c sliced red onions

  8. 1 c sliced white onions

  9. 1 c sliced shallots

  10. 1 c sliced leek whites

  11. 1 c sliced scallions --

  12. : parts only)

  13. 3/4 c flour

  14. 6 c light chicken stock

  15. 1 c cream

  16. : Salt and pepper

  17. 3 ts snipped chives, -- for : garnish

  18. Heat butter in a large saucepan, add bacon and cook

  19. until fat renders and bacon is crispy. Remove bacon

  20. with a slotted spoon, drain on paper towels and set

  21. aside for garnish. To bacon fat add yellow, red, and white onions and shallots. Cook until they begin to

  22. wilt. Add leeks and scallions and cook for 3 minutes.

  23. Dust flour over, and stir and cook until flour turns

  24. golden. Add stock, bring to a boil and reduce heat.

  25. Simmer for 30 minutes. Add cream and season to taste

  26. with salt and pepper. Pour about one-third of soup and solids into a blender or food processor and puree, or pulse with an immersion blender. Reheat and serve

  27. garnished with bacon and chives. Garnish with a

  28. spoonful of onion marmalade, if desired.
