  9. 2 ts Aniseed Crushed

  10. 5 1/2 c Unbleached Flour

  11. 1/2 c No Sugar Apple Juice

  12. 3/4 c Unsweetened Pinapple Juice

  13. 1 1/4 c Water

  14. 2 ts Freshly Grated Orange Rind

  15. 1/2 ts Cinnamon

  16. 1 t Honey

  17. 1 t Oleo

  18. 1/2 t. For Bowl

  19. 1/2 c Each Whole-Wheat Flour And Buckwheat Flour

  20. 1/2 ts Unsalted Corn Oil

  21. Margarine For Pans OR Use Spray

  22. 375 F.

  23. 5O Cal. Per

  24. 3/8 Inch Slice

  25. (Fat 1/2. Chol. O.) 1. in A Large Mixing Bowl,

  26. Combine Yeast, Milk, Aniseed & 2 C. Unbleached Flour.

  27. 2. in A Saucepan, Combine Juices, Water, Orange Rind,

  28. 1 T. Oil. Heat Until Warm.

  30. 115 F.

  31. Spoon For 1 Min. Cover With Plastic Wrap & Let Stand 10 Min.

  32. 3. Add Whole-Wheat Flour, Buckwheat

  33. Flour And All But 1/2 C. Of Balance Of Unbleached

  34. Flour, 1/2 Cup At A Time, Beating With Wooden Spoon

  35. After Each Addition. After Adding 4 1/2 C. Of Flour,

  36. Dough Will Become Difficult To Beat With Wooden Spoon.

  37. Scoop Up & Turn Onto Lightly Floured Board & Knead,

  38. Adding Balance Of Flour, If Necessry, To Make A Smooth

  39. & Elastic Dough. 4. Shape Dough Into Ball. Drop Into Lightly Oiled, Fairly Straight-Sided Bowl, Turning To

  40. Coat. Cover Tighly With Plastic Wrap & Let Rise At

  41. 70 To 80 F.

  42. (About 1 Hour 15 Min.) 5. Punch Dough Down. Transfer

  43. To Board & Cut Into 3 Equal Parts. Cover With Waxed

  44. 5 Min.

  45. 6. Roll Each Piece

  46. Out Into A 7 X 12 in. Rectangle. Starting With Short

  47. End. Roll Up Tightly, Tucking in Sides & Pressing Seams

  48. To Hold. Place, Seam Side Down, in 3 Small Loaf Pans

  49. 7 1/8 X 3 5/8 X 2 1/4 in.

  50. Cooking Spray. Cover With Plastic Wrap & Let Rise At

  51. Room Temperature Until Doubled in Bulk. (About 1

  52. 7. Gently Remove Plastic Wrap. Bake in

  53. 375 F. Oven For 40 Min. Remove Bread From

  54. Pans. Place Back in Oven Directly On Rack & Bake For 5 Min. More. Loaves Should Be Crispy & Golden Brown.
